My Favorite Energy Bites (Gluten Free + Vegan)

There's nothing I love more than something yummy that's also (mostly) healthy for you! Add in convenience and it's a dream come true ;)

I like to keep a supply of these energy bites in my freezer so that we always have a healthy go-to for those moments when you want something a little sweet, or need a bite or two of something to keep you going through a busy day. I've tried a lot of recipes (some from a healthy eating class I took, some from Pinterest), and combined aspects of my favorite three to make the mother of all energy bite recipes. These are SO GOOD (and easy), and are the BEST when frozen!

Did I mention they are gluten free and vegan, too? Yes, please!

Here's what you need:




2 Cups GF Oatmeal (I like Bob's Red Mill)
2 Tbsp Ground Flax (I like Bob's Red Mill for this too)
1/2 Cup Mini Chocolate Chips (Enjoy Life brand keeps this vegan)
1/2 Cup Peanut Butter (or any nut/seed butter)
1/4 - 1/3 Cup Honey (depends on how sweet you like it)
1 Banana
1 Tspn Pure Vanilla
1 Tspn Salt




First, mix all of your dry stuff together - the oatmeal, flax + chocolate chips. (PS, I doubled the recipe to have a lot on hand, so mine will look like a lot more than yours!)




Then mash your banana into the mixture with a fork or pastry blender. Add the vanilla as you smush.




Add in your sticky stuff....the honey and peanut butter, and mix it all well.




The mixture should look like this when you have it all combined. Sticky! Make sure your hands are clean, and then start rolling them into little balls - whatever size you prefer. I make mine so that you get a few bites in each one.




I store mine in tupperware containers like this and put them in the freezer. I know I already said this, but these are the best when they are frozen!!! So I usually put them in there and eat them when they're still chilly - my kids will eat them in any form, though.

The whole family loves these! They make a great snack or part of a quick breakfast - they even make an awesome dessert. You'll always want them on hand!!
